The iron was developed for the new menu, overseen by Michel Roux Jr and delivered by chef James Hawley, first created for the fun, and surprisingly influential,
Pub in the Park festival in Marlow in May 2018. Both menu and cooking iron have become firm favourites.

James Hawley, Head Chef of The Wigmore
Leading the kitchen team at The Wigmore is James Hawley, who trained at Galvin Bistro and La Chapelle. He then joined the Roux team at the Landau in The Langham, London before moving to the Terroir group, working at The Green Man & French Horn as well as Brawn. He returned to The Langham, London to take up the role of Head Chef at The Wigmore for its opening in Summer 2017. The Netherton Foundry 5 ¾ inch cooking iron was developed for The Wigmore’s new dishes, specially created for Pub in The Park in Marlow.
