The Secret of Cooking by Bee Wilson

This is the distillation of Bee Wilson’s new book, the Secret of Cooking, summarised beautifully by Bee herself:
“The secret we all need the most is how to get the spark of cooking back into our lives so that the kitchen becomes a place we actually want to be. Delicious is not just about the way food tastes; it is a mindset. More than anything, the secret ingredient that makes the difference in the kitchen is enjoyment.”

And in the Observer food monthly, there is a significantly longer extract from the book, including her tip for the top ingredient to good cooking.  And no, it’s not something you will find in your larder, farm shop or supermarket shelf.  She simply says “Ask your friends”

Click here to read Bee Wilson's Observer article: ‘Cooking brought me back to my senses’: the recipes that rekindled my appetite for life ( Sunday 20th August 2023).

There is a recipe in the book for a no knead focaccia, based on a recipes dating back thousands of years and further developed by Los Angeles based baker Suzanne Dunaway.  Bee has baked her own version in a Netherton Foundry prospector pan and this is pictured on her Cambridge kitchen table, illustrating the article.
