Nigel Slater: Roast tomatoes, thyme and garlic toasts

 
Yet again, Nigel Slater has come up with a mouthwatering recipe published in The Observer 4.7.22 . It's absolutely perfect for a summer lunch, and makes the most of the abundance of tomatoes now in the shops, or possibly even in your greenhouse. Our tomato plants are just coming in to flower, so this recipe is bookmarked for our home grown harvest.  Although in all honesty we could be trying it out sooner than that!
 
   
 
And, yet again, Jonathan Lovekin has done not only Nigel, but also Netherton proud with this fantastic photo of the recipe presented in a Netherton prospector pan.
 
This just goes to show that once you have built up a good patina on your patina, through regular use, then acidic foods pose no threat to the finish.  We are often asked if you can cook tomatoes in our naturally, flax oil seasoned pans and we think this proves the pointy that “Yes, you can”.
