When it’s bitterly cold outside, you need to crank up the heat and that doesn’t mean you have to turn up the central heating.
Nigel Slater raises the temperature with his spicy equivalent of an electric blanket, creating a fiery red harissa -style mix and using it to liven up feta and vine leaf parcels. As he points out, you could simply use a shop bought version, but the temptation to potter in a warm kitchen, looking out on to the frozen outdoors is a strong one. And this way you can adjust the heat to your own tastes, dialling up or down as much as you like.
