A Christmas side dish from Nigel Slater

Planning ahead
Too soon? We think not, for all the mild weather messing with our heads, it's less than 6 weeks to Christmas!
And who better to guide us through the culinary preparations than Nigel Slater? In last Sunday's Observer 13.11.22, he created a selection of new side dishes to serve along with the "Christmas classics", or better still on Boxing Day.
The opening and closing words of the introduction sum them up beautifully.
"Oh my God, the accompaniments.................... - all of these ring my bell"
Naturally we are particularly drawn to the potatoes cooked not only with goose fat and rosemary, but in a prospector pan. Yes please!!
