Joe Trivelli’s colourful spring recipes

 
If anyone should know about sunshine cooking, it has to be a chef with Southern Italian heritage.  And chef Joe Trivelli of the River Café, renowned for its Inventive seasonal Italian cuisine can always be relied upon to deliver flavours to herald the “optimism of a full Spring and long summer”, as he puts it.
Romas Foord’s beautiful photo of Joe’s recipe for ‘salt’ cod cooked in a prospector pan would brighten any day.
