The Times: Easy lemon, potato and chicken traybake by Hannah Evans

 
When life gives you lemons, you are in luck. But if no-one has handed over a bag of yellow citrus fruit, Hannah Evans’ easy lemon recipes in the Times magazine are the best excuse we can think of to go and buy your own. And whilst lemonade is always a good call, there are many, many more options for this most versatile and flavoursome ingredient.

And have you ever wondered about the phrase advocating lemonade making? That now ubiquitous call to optimism and positivity. Apparently, according to Wikipedia, it was first appeared in print in 1909, attributed to writer Elbert Hubbard who wrote; "A genius is a man who takes the lemons that Fate hands him and starts a lemonade-stand with them." He also used it in a 1915 obituary he penned and published for dwarf actor Marshall Pinckney Wilder. The obituary, entitled The King of Jesters, praises Wilder's optimistic attitude and achievements in the face of his disabilities: "He proved the eternal paradox of things. He cashed in on his disabilities. He picked up the lemons that Fate had sent him and started a lemonade-stand.”
 
We do however strongly advocate making your own lemonade, as it is now so difficult to buy commercially produced lemonade without artificial sweeteners. This recipe for really easy lemonade from BBC Good Food couldn’t be simpler.
