Pancakes and punctuation – Eat beans and roots - Nigel Slater - The Observer Food Monthly

When Nigel Slater states at the start of a recipe that a non-stick pan is essential and uses his Netherton Foundry prospector pan as an example, then you can be sure it’s going to work!
And you can also be confident that any recipe of Nigel’s is going to be tasty.

Last Sunday, in the Observer Food Monthly, his selection of vegan/vegetarian recipes under the delightful headline, “Eat roots and beans”, a terrific riff on Lynne Truss’s zero tolerance approach to punctuation, included a suggestion for using up any spare carrots.
The carrot, potato and cheese pancake not only looks easy enough to make, but also uses up the elements of your veg box that so often get overlooked or neglected.  And the benefit of using the prospector pan, apart from its inherent non-stick qualities, is that it is the perfect pan for taking from the hob, into the oven.  You can, of course then take it from the oven to the table to serve.

If you are unfamiliar with Lynne Truss’s book, here is a joke with explains it:
“A panda walks into a cafe. He orders a sandwich, eats it, then draws a gun and fires two shots in the air.
"Why?" asks the confused waiter, as the panda makes towards the exit. The panda produces a badly punctuated wildlife annual and tosses it over his shoulder.
"I'm a panda," he says, at the door. "Look it up."
The waiter turns to the relevant entry and, sure enough, finds an explanation.
Panda. Large black-and-white bear-like mammal, native to China. Eats, shoots and leaves.”
