The Telegraph: No-fuss fish feasts from Diana Henry and her Netherton Foundry Prospector Pan

I can still recall first meeting Diana Henry at a BBC Radio 4 recording in Bristol in 2016. 
 
 
And can bring to mind even more vividly the telephone conversation I subsequently had with her, when she rang to ask us for a very specific pan for dishes she was planning to include in her then next book, From the Oven To The Table.  The 12” prospector pan that she needed, and which later appeared on the cover of the book,  was already in production, but it is down to Diana that it now has a lid.
 
 
But what is more exciting than driving down to London to deliver the pans she needed, is the fact that she continues to use them all these years later.  In Saturday’s (18.10.2025) Telegraph magazine she writes about creating “no-fuss fish feasts with just five ingredients”.  And this included a dish of mussels, “ready in a few shakes of the pan” with ‘nduja and white beans, cooked in that very same prospector pan.
