A large copper jam kettle with black iron handles, these are also known as preserving pans.
 
 
This jam kettle is hand spun pure copper, with black iron handles adorned with a Netherton brass rivet.
Featuring a rolled top edge with a polished finish, the jam pan will look elegant in any kitchen.

Why do I need a copper jam kettle?

A copper jam kettle has long been the preferred vessel for preservers.  Copper’s rapid heating and cooling characteristics mean that the jam heats evenly, retaining its beautiful fruit colours and precise control prevents overheating and scorching. The sloping sides make stirring simple and effective, while the wide top creates a wide surface area for great evaporation, so setting point is reached much sooner, making the whole process much quicker.The large flat bottom provides a stable base even on a gas burner, while the rounded angle of the skirt allows you to work all the mixture. The two iron handles make it easy to pour your cooked jam.Our other copper pans are lined with tin, but the high sugar content of jam prevents the copper from reacting to the naturally occurring acids in fruits. In order to ensure there is no reaction, sugar should be mixed with other ingredients before being cooked in a jam pan. 
 
 
This pan (and all unlined copper pans) are not suitable for low-sugar or no-sugar recipes as fruit acids will react with the copper. If you wish to make smaller quantities of these recipes we recommend using a tin lined pan such as our copper 8 inch stockpot.
 

Caring for Netherton Foundry Jam Kettle

After use, rinse with hot water and a soft brush then dry thoroughly. Never put the copper jam kettle in the dishwasher. Store the jam pan in a dry airy place. Over time a greenish patina may develop on a copper surface. This is perfectly fine on the exterior of your jam pan if it is not going to touch food. If you want to remove this, the jam pan can be polished using a copper cleaner and a soft cloth, then rinsed with water and dried thoroughly. This should keep the copper looking shiny.
